Green pistachio kernels are one of the most valuable Iranian pistachio derivatives, which are considered luxury export products due to their uniform green color, soft texture, and high fat content. The European market, especially Germany, is a buyer of this type of whole kernel, and there is a good demand for this type of kernel in export markets. Of course, in the domestic market, it is very popular in special ice creams and especially special baklava.

Specialized description:

Green kernels are made from unripe pistachios. Unlike ripe pistachios, the skin of the pistachio kernel is not usually removed for processing. They are spread out in the sun as soon as they are picked from the tree to dry completely. For special uses such as pistachio slices, the thin skin on the pistachio kernel is removed, which of course reduces the fat content of the kernel.
